Easter Lunch Recipes

Easter is the perfect time to relax and enjoy a long weekend with family and friends. Spoil the people you love with a delicious home cooked meal with recipes kindly supplied by our friends at SmegBosch and Westinghouse. Enjoy a succulent Lemon and Sage Roast Chicken, Lemongrass Fish Kebabs, a stunning Strawberry Tiramisu for a showstopping desert and don’t forget the Hot Cross Buns – it’s not Easter without them!

Starter: Lemongrass Fish Kebabs With Bulgur Wheat

Delicious Lemongrass Fish Kebabs ready to eat for Easter Lunch.

Ingredients

Bulgur Wheat

  • 250g Bulgur Wheat 
  • 3 Tomatoes
  • 1 Onion
  • 1 Tablespoon Parsley
  • 1 Tablespoon Mint
  • Pepper, Freshly Ground
  • 500ml Vegetable Stock Salt

Fish Kebabs

  • 2 Sticks Lemongrass
  • 300g Salmon Fillet
  • 300g Sea Bass Fillet
  • 8 Small Prawns
  • A Little Olive Oil
  • Salt to Season
  • Pepper, Freshly Ground

Method

  1. Fill the small unperforated steamer with the bulgur wheat. Dice the tomatoes. Finely chop the onion, parsley and mint, and add to the bulgur wheat together with the diced tomatoes. Next, pour the vegetable stock over the bulgur mixture and stir all together. Season to taste and steam the bulgur wheat as indicated.

  2. Wash the lemongrass, halve it lengthwise and crosswise and place it to one side. Rinse the fish and prawns briefly under cold water and pat dry. Trim the fish and peel the prawns. Cut the fish into approx. 4x4 cm pieces and create a kebab using the lemongrass as a skewer, alternating the pieces of fish with prawns.

  3. For the espresso butter, stir the butter until light and fluffy. Mix in all the other ingredients and season with pepper and herb-flavoured salt.

Main: Lemon And Sage Roast Chicken And Potatoes

Roast Chicken on table ready to be shared for Easter Lunch.

After just 50 minutes in the combi-steam oven, family favourites roast chicken and potatoes are cooked to golden perfection.

Ingredients

  • 1.6kg whole chicken
  • 1 onion, quartered
  • 1 lemon, quartered
  • 1 bunch sage
  • 1kg new potatoes
  • 2 tablespoons olive oil
  • Salt & pepper

Method

  1. Set combi-steam oven to steam + static + fan and pre-heat to 220⁰C with 70% steam.

  2. Stuff chicken cavity with onion, lemon and sage and place on baking tray with new potatoes. Drizzle chicken and potatoes with olive oil and season to taste with salt and pepper. Roast for 50 minutes.

  3. Carve chicken and serve with pan juices and roast potatoes.

Dessert: Strawberry Tiramisu

Difficulty: Easy

Ingredients

  • 600ml thickened/heavy cream
  • 300g mascarpone cheese
  • 1 tsp vanilla bean paste
  • 2 tbsp Cointreau (optional)
  • 100ml orange juice
  • 4 tbsp caster sugar
  • 2 tbsp icing sugar plus more for serving
  • 2 pieces of sponge cake (10x15cm) or
  • 16 savoiardi biscuits
  • 500g strawberries

Method

  1. Finely chop ¾ of the strawberries. Place strawberries, orange juice and caster sugar into a small sauce pan and simmer on a medium heat until the strawberry dissolves.

  2. Using a hand blender, puree the mixture until smooth. Place mixture onto a brownie pan and allow to cool.

  3. In a medium bowl, beat the cream until soft peaks form. Add the icing sugar, vanilla bean paste and mascarpone, beat until well combined.

  4. Get the serving tray/glasses ready.

  5. Cut the sponge or savoiardi to fit the serving tray/glasses. Place the sponge fingers into the strawberry mixture and allow to sit for 30 seconds each side.

  6. Layer the biscuits at the bottom of each glass/tray, top with a dollop of the strawberry mixture (if making the adult version drizzle some Cointreau onto the biscuits), top with cream, repeat to produce another layer, repeat until you have no more biscuits left.

  7. Refrigerate for at least two hours.
