These are my kind of melt-n-mix mini puddings that are easiest of all to make, perfect for sharing, and they’re gluten-free! Baking cakes and puddings is always best done in a conventional oven, which is why most fan ovens provide a “conventional” setting. That way, the batter doesn’t rise too quickly and crack on you. Luckily, even if this happens, once they’re cooled, you can mask any funny business with a decadent dollop of fluffy-cloud cream and crème fraiche, which you can whisk by hand, or set and forget in your stand mixer. Think of the flavour profile as an Irish coffee, in solid form. The espresso and whiskey balances brilliantly with the broody sweetness of couverture chocolate and cocoa. ‘Couverture’ refers to the quality of the chocolate, with a greater percentage of cocoa butter and finer texture, which gives it that rich, melt-in-the-mouth result we crave in chocolate desserts. Indeed, with the surprising pops of salted chocolate already gilding this lily, you’re welcome to leave the whiskey (and even the coffee) out entirely if making these with the kiddies, swapping in 50ml of just-boiled water instead.

What you’ll love about this tray bake, besides the fact that it’s ready in a jiff, thanks to the magic of a fan-forced oven, is that you’ve probably already got most of the ingredients in your pantry. I’ve served this on wide Turkish pide, which you can bake between two trays to maximise the surface area that gets lovely and crispy. This tray bake is a great one to serve for vegos – or use planty cheese to make this vegan, but would also be delish as a side dish served with a roast chicken (such as my upside down one). You could even nestle some marylands into your oven’s widest, highest-sided tray, along with the rest of the ingredients and roast for 40-50 mins until the internal temperature is at 75-80°C (use a meat thermometer) and/or the juices run clear. This tray bake can be prepared a day ahead and reheated on low to serve warm – or pulled out of the fridge half an hour before serving to take the fridge chill off and serve cold. The bread is best prepared on the day.

This is my favourite way to roast a chook: dry, hot, upside-down! First you use the arctic dryness of your refrigerator to dry-age the chicken overnight on the bottom shelf (above the crisper) to help get the skin phenomenally crispy, then you roast breast side down, to protect the delicate meat from drying out and give you extra crispy skin on the legs (my favourite bits!).

Starting the oven raging hot means that you give that first blast of heat to encourage the golden colour and keep the skin from bubbling, then dropping the heat to keep it roasting until it’s roasted on top and tender throughout. For the cooking time, roast a bird of this size for around 1 hour 10 minutes. (A good rule of thumb is 40 minutes for the first kilogram, then 20 minutes for every extra kilo.)

For the lemony gravy, there’s no need to do anything but whisk the ingredients together in the pan – the mustard and lemon juice will emulsify with the schmaltzy chicken pan juices to create the ultimate tangy side.

The upside-down method also extends to my light and bright side here, perfect for a festive feast down under – an iceberg wedge salad, where the Christmassy cranberry & chive dressing’s underneath so it can stand for hours without getting wilty.
