How To Stay Cool When Cooking For A Crowd

“The secret to hosting on special occasions like Easter without breaking a sweat is to split your Easter cooking between different appliances,” says Tania Grillinzoni, The Good Guys Buyer – Cooking and Dishwashers. “For example, choose a slow-cook main dish like a rich stew or brisket that can simmer away merrily on your cooktop all morning, while your oven gets busy with a delicious baked dessert.”

“And don’t forget to lean on your small appliance heroes too, to help you tackle tasty starters or sides without tying up your core cooking appliances,” adds Tracey Ellis, The Good Guys Buyer – Portable Appliances.

The Starter: Gluten-Free Lamb & Chickpea Balls

Bring the traditional Easter meat to your table with these flavour-packed appetisers, served with a tangy coriander dip to awaken the tastebuds.

Serves 4

Ingredients

  • 3 tbsp (60ml) olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground chilli
  • 1 x 400g tin chickpeas, drained, rinsed
  • 400g lamb mince
  • 1/2 cup coriander leaves, finely chopped

For The Coriander Dip:

  • 1 cup Greek-style yoghurt
  • 1 Lebanese cucumber, finely chopped
  • 1 tbsp coriander, finely chopped

Method

1. Heat 1 tbsp of oil in a frying pan over medium heat. Sauté onion and garlic for 2 minutes or until soft.

2. Add cumin, coriander and chilli and cook for a further 2 minutes or until fragrant. Set aside.

3. Place chickpeas in a food processor and process until smooth. Combine chickpeas, onion mixture, mince and coriander leaves in a large bowl. Season to taste.

4. Roll level tablespoons of the mixture into balls. Heat remaining oil in a frying pan on high. Cook meatballs in batches for 3 minutes each side or until browned all over and cooked through. Drain on paper towel.

5. Meanwhile, make coriander dip by combining all ingredients in a small bowl. Season to taste. Serve with lamb and chickpea balls and a green salad.

The Main: Gluten-Free Osso Bucco

If you’ve never had this aromatic Italian classic before, you’re in for a treat: succulent meat, braised low and slow, slides off the marrow-filled bone, topped with a punchy gremolata of parsley, lemon zest and garlic.

Serves 4

Ingredients

  • 500g osso bucco (beef shin with bone in)
  • 4 tbsp gluten-free flour
  • 2 tbsp (40ml) olive oil
  • 1 carrot, peeled and diced
  • 1/2 swede, diced
  • 1/2 leek, diced
  • 1 tbsp minced garlic
  • 1/2 cup (125ml) red wine
  • 1 x 400g tin diced tomatoes
  • 800ml water
  • 4 large mushrooms, sliced
  • 1/4 cup parsley, chopped
  • 1 sprig of rosemary
  • 1 x 420g tin lentils, drained and rinsed

For the gremolata topping:

  • 1/4 cup parsley
  • Zest of 1 lemon
  • 2 cloves garlic

Method

1. Toss meat in flour to coat. In a large pot, heat oil. Brown meat, then remove from pan and set aside.

2. Add carrot, swede, leek and garlic and cook for 2 minutes or until lightly browned. Add wine and bring to the boil. Reduce heat.

3. Add tomatoes, water, mushrooms, parsley and rosemary. Return meat to pan and simmer for 2 hours on a low temperature or until meat is tender. Add lentils and warm through.

4. Meanwhile, make gremolata – finely chop together parsley, lemon zest and garlic. Top each serve of osso bucco with a spoonful of gremolata to serve, alongside corn couscous or soft polenta.

The Dessert: Gluten-Free Devil’s Chocolate Cake

Why should the kids get all the best chocolate at Easter? Give the bunny a run for his money with this wickedly good gluten-free cake.

Serves 8

Ingredients

  • 150g butter, softened
  • 1 cup (250ml) water
  • 3 eggs, lightly beaten
  • 2 cups (300g) gluten-free self-raising flour
  • 1 tsp bicarb soda
  • 2/ 3 cup gluten-free cocoa
  • 1 3/4 cups (400g) caster sugar

For The Chocolate Icing:

  • 2 cups (300g) gluten-free icing sugar
  • 2 tbsp gluten-free cocoa
  • 2 tbsp butter, softened
  • 3 tbsp (60ml) hot water, approximately
  • Grated dark chocolate, to decorate

Method

1. Preheat oven to 160ºC. Grease a deep 20cm round cake tin and line base with baking paper.

2. Place butter, water and eggs into a large mixing bowl. Sift in flour, bicarb soda and cocoa. Stir in sugar. Beat with an electric mixer for 3 minutes or until mixture changes colour. Pour mixture into prepared tin.

3. Bake for 50-60 minutes or until a skewer inserted into the centre of the cake comes out clean. Leave the cake to cool in the tin.

4. To make the chocolate icing, place icing sugar and cocoa in a bowl and stir. Add butter to the mixture. Slowly stir in the hot water to thicken icing to your liking. Spread icing across top of cooled cake and decorate with grated chocolate.

Cook’s Tip: For a great cake for the grown-ups, swap out the cocoa with coffee. Or try half cocoa and half coffee to create a mocha coffee cake. So good!
