Good Friday Feasting

Get your Easter long weekend off to a sweet start by toasting halved hot cross buns in an air fryer. Just three minutes in the fryer and a dollop of butter afterwards is all you’ll need for bakery-class results. Pair them with a piping hot brew from the De'Longhi PrimaDonna Soul. Salmon Fillets With Udon Noodles

Add a splash of colour to your Good Friday table with this speedy, Lent-friendly salmon stir-fry recipe, courtesy of the Sunbeam Banquet Frypan Diamond Force.

Prep Time: 10 minutes
Cook Time: 15 minutes
Serves: 4–6

Ingredients:

  • 4 portions (approx. 800g) salmon fillets, skin-off, cut into 3cm cubes
  • 3 tsp sesame oil
  • 3 tsp soy sauce
  • 3cm piece fresh ginger, peeled and grated
  • 440g udon noodles
  • 2 tbsp peanut oil
  • 1 large brown onion, cut into wedges
  • 1 bunch broccolini, cut into 3cm pieces
  • 1 red capsicum, thinly sliced
  • 150g snow peas, de-stringed
  • 3 tbsp rice wine vinegar
  • 3 tbsp mirin
  • 1 tbsp soy sauce, extra

To Serve:

  • 3 spring onions, thinly sliced
  • 2 tsp black sesame seeds or nigella seeds

Method:

  1. Combine sesame oil, soy sauce and ginger in a medium bowl. Add salmon and coat well. Set aside for 10 minutes.
  2. Prepare noodles according to packet directions. Set aside.
  3. Heat ½ of the peanut oil in the electric frypan on MIN/MED heat and cook salmon cubes for 4 minutes, 1 minute on each side. Remove from pan, set aside.
  4. Add the remaining peanut oil to the pan and cook onion, broccolini and capsicum. Toss in the snow peas and cook for 1 more minute.
  5. Return the salmon to the pan with the noodles, pour over the vinegar, mirin and extra soy sauce, and gently fold all ingredients together. Cook for 30 seconds.
  6. Remove from pan and garnish with spring onions and sesame seeds.

Minted Lamb Roast

Lamb and mint sauce are a winning combination. Top the Easter parade with this delicious and easy roast lamb with homemade mint sauce, made on a Weber Family Q 3100+ LP Flame Red barbecue. Baste the leg of lamb with the sauce while it’s cooking on the barbie for a guaranteed Easter Sunday slam dunk.

Prep Time: 10 minutes
Cook Time: 1 ½ hours
Difficulty: Easy
Serves: 6

Ingredients:

  • 2–2.5kg bone-in leg of lamb
  • 2 garlic cloves, each cut into 6 pieces
  • ½ tbsp olive oil
  • Sea salt
  • Freshly ground black pepper

Mint Sauce:

  • 2 tbsp boiling water
  • 1 tsp fine sea salt
  • 2 tbsp brown sugar
  • 2 ½ tbsp malt vinegar
  • ¾ cup (1 bunch) finely chopped mint leaves

Method:

  1. Prepare the barbecue for indirect cooking over medium heat (190°C–230°C). If using a Weber® Q® barbecue, set up your barbecue with a convection tray and a trivet.
  2. Using a sharp knife, cut 12 small slits into the flesh of the lamb. Push a piece of garlic into each slit. Drizzle the lamb with the oil, and season with salt and pepper all over.
  3. Roast the lamb over indirect medium heat, with the lid closed, for 40 minutes. While the lamb is roasting, make the mint sauce. In a medium bowl, combine boiling water, salt and brown sugar, stirring until the salt and sugar have dissolved. Add vinegar and mint; stir to combine. Pour ¾ of the mint sauce into a serving dish and set aside until the lamb is ready to serve.
  4. Once the lamb has cooked for 40 minutes, use a basting brush to brush the lamb with some of the reserved (1/4) portion of the mint sauce. After a further 20 minutes, baste again with any remaining mint sauce. Continue roasting the lamb for a further 20 minutes or until the lamb has cooked through to your liking.
  5. Once the lamb has cooked, leave to rest for at least 10 minutes before carving, to allow the juices to redistribute. Serve the lamb with the reserved mint sauce.

COOK’S TIP: To estimate the cooking time, measure the meat through its thickest part and cook for 1 minute per millimetre for medium. For example, if the roast is 90mm thick, cook for 90 minutes. Even easier, make sure that your roast is cooked to perfection by using a fool-proof meat probe thermometer.

Easter Feasting For Vegetarians

Your vegie friends and fam will be fighting off the meat-eating tribe with this utterly delicious and hearty stuffed eggplant recipe, courtesy of Justine Schofield and Tefal’s Easy Fry Grill & Steam XXL Air Fryer.

Stuffed Eggplant

Prep Time: 20 minutes
Cook Time: 45 minutes
Serves: 4

Ingredients:

  • 2 x medium eggplant, halved lengthways (ideally 15cm long so they fit snug in the Tefal Easy Fry Grill & Steam)
  • 3 tbsp extra virgin olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, finely chopped
  • 200g crushed tomatoes
  • 1/2 cup cooked rice
  • 3 sprigs dill and parsley, finely chopped, plus extra to garnish
  • 3/4 cup panko breadcrumbs
  • 2 tbsp grated parmesan
  • 40g walnuts, chopped
  • Zest of 1 lemon
  • 100g feta, crumbled (optional)
  • Salt and pepper

Method:

  1. Arrange the eggplant on the standard plate in the appliance, skin-side down. Cook in STEAM mode for 15-20 minutes or until the eggplant are soft.
  2. In the meantime, heat 2 tablespoons of the oil in a fry pan and add the onion and garlic, and season with salt and pepper; fry until soft with a little colour. Then add the tomato and bring to the boil for 4–5 minutes. Remove from the heat and add the rice and herbs.
  3. Carefully lift out the eggplant and, use a spoon to scoop out the flesh to hollow out. Roughly chop the eggplant flesh and stir through the onion mixture. Season again with salt. Spoon back into the hollowed-out eggplant.
  4. Mix breadcrumbs with parmesan, walnuts, lemon zest and remaining oil. Sprinkle over the top of eggplants and return to basket. Cook on AIRFRY mode for 15 minutes or until golden.
  5. Serve with a sprinkle of feta, if desired, and extra herbs.
