Moroccan Beef Kebabs
Bursting with Moroccan flavour and served with a red onion pickle and yoghurt sauce, these juicy beef kebabs are made for summer lunches and stress-free festive eats.
Serves: 4Prep & Cook Time: 35-40 mins
Ingredients:
FOR KEBABS
1/2 red onion
500g ground beef
3 tsp ras el hanout spice mix
1 egg
1/3 cup fresh coriander leaves, finely chopped
Pinch of salt and pepper
Wooden skewers, pre-soaked in water
Olive oil, for cooking
FOR RED ONION PICKLE
1/2 cup (125ml) water
1/4 (60ml) cup apple cider vinegar
1 1/2 tbsp caster sugar
1 red onion, thinly sliced
FOR YOGHURT SAUCE
1/2 cup (130g) plain Greek yoghurt
2 tbsp olive oil
Pinch of ras el hanout spice mix
FOR SIDE SALAD
200g mixed small tomatoes, sliced in half
1/2 Lebanese cucumber, sliced
1 tbsp coriander leaves, roughly chopped
1 tbsp lemon juice
1 tbsp olive oil
Pinch of salt
TO SERVE
Extra coriander leaves, roughly chopped
Lemon wedges
Lebanese flat bread
Method:
To prepare the onion pickle, combine the water, vinegar and sugar in a small saucepan. Stir over medium heat until the sugar has dissolved. Pour the hot liquid over the onion slices and set aside to pickle for 5-10 mins.
Drain and set side until serving.
To make the kebabs, add the red onion to your KitchenAid food processor and blitz until finely chopped.
Add the beef, spice mix, egg, coriander leaves, salt and pepper. Blitz until the mixture is well combined.
Use clean hands to shape the mixture into equal portions and thread onto pre-soaked wooden skewers.
Preheat BBQ or stove top grill to medium-high heat.
Lightly brush kebabs with olive oil and place on the grill. Cook until dark golden grill lines appear then rotate and cook through. Remove from the grill.
To prepare the yoghurt sauce, add the yoghurt and olive oil to a small bowl, stirring well to combine. Sprinkle over the spice mix. Set aside.
To prepare the side salad, combine the tomatoes, cucumber, coriander, lemon juice, oil and salt in a serving bowl. Toss well to coat. Set aside.
Place the kebabs on a platter, topped with pickle and a sprinkle of coriander leaves. Serve with yoghurt sauce, Lebanese bread and lemon wedges on the side.

Delectable Desserts

Festive Pavlova With Berry Compote
Juicy seasonal berries and edible flowers atop a mountain of fluffy sweet cream … our festive pavlova is what Christmas dessert dreams are made of!
Serves: 6-8Prep time: 2 hrs, plus cooling time
Ingredients:
FOR PAVLOVA
6 egg whites
1 1/2 cups caster sugar
1 tbsp cornflour
1 tsp white vinegar
FOR BERRY COMPOTE
500g frozen mixed berries
1/2 cup caster sugar
300ml thickened cream
1 tsp vanilla essence
1 tbsp icing sugar
250g fresh strawberries, sliced in half
125g fresh raspberries
200g fresh cherries
Mint leaves
Edible flowers
Method:
Preheat oven to 120°C and line a large, flat baking tray with baking paper.
Attach the whisk attachment to a KitchenAid mixer, whisk the egg whites until soft peaks form.
Gradually add 1 1/2 cups of the caster sugar while the stand mixer is running on mid speed. Whisk for 6-8 mins until the sugar has completely dissolved.
Turn the stand mixer down to a very low speed and add in the cornflour and vinegar until just combined.
Using a spatula, scoop out the mixture onto the lined tray. Very gently scoop up the sides to form a round circle with a flat top.
Place in the oven to bake for 1 1/2 hrs then turn off the oven and leave the door slightly ajar without opening it. It’s best to leave the pavlova overnight to cool down slowly.
To make the berry compote, add the frozen berries and caster sugar to a medium-sized saucepan. Simmer over medium to low heat, with lid ajar, for 15 mins or until the mixture has thickened. Remove from heat and set aside to cool. Once cooled, place in the fridge until ready to serve. This can be made ahead of time.
When you’re ready to serve, add the cream, vanilla essence and icing sugar to a KitchenAid stand mixer with the whisk attached. Whip the cream until soft peaks form.
Add 3 tbsp of the berry compote to the whipped cream and fold through.
Spoon the cream mixture over the top of the pavlova, followed with a few spoonfuls of the berry compote. Finish off with piling up the fresh berries and cherries over the top. Garnish with fresh mint leaves and edible flowers.
