Prep & cook time: 1 hour 30 mins

Serves 6-8

Ingredients

Meat sauce:

365g 80/20 ground beef

3 cloves garlic, minced

1 medium yellow onion, finely chopped

225g Italian sausage links (casing removed and crumbled)

5 tsp Italian seasoning

1 jar marinara sauce

225g canned crushed tomatoes

2 tbsp red wine beef stock

120ml beef stock

4g fresh basil leaves, chopped

2g dried parsley

4g granulated sugar

3g salt

1g freshly ground black pepper

2 tsp olive oil

White sauce (bechamel):

60g butter

60g plain flour

480ml whole milk

1g ground nutmeg

100g grated parmesan cheese (plus extra for garnish)

2g salt

Ground black pepper, to taste

Lasagne:

9 no-boil lasagna noodles

215g shredded mozzarella cheese

fresh basil leaves, to taste (for garnish)

Non-stick cooking spray, as required

Method

  1. In a heavy-bottomed pot over medium heat, cook the 80/20 ground beef for about 2-3 minutes until just cooked and release some liquid. Use a slotted spoon to scoop the meat out and set it aside.
  2. Remove the liquid from the pot, and roughly wipe the pot with a paper towel.
  3. In the same pot, heat olive oil over medium heat. Once hot, add the garlic and yellow onion. Cook for 3-5 minutes until the onion is translucent.
  4. Add the sausage links and Italian seasoning. Cook over medium-high heat for about 3 minutes or until the meat is cooked through.
  5. Add ground beef back to the pot along with the marinara sauce, crushed tomatoes, beef stock, basil leaves, dried parsley, sugar, salt and black pepper. Stir until well combined.
  6. Turn the heat to medium-low and let the meat sauce simmer for 20-25 minutes. Stir the sauce occasionally to prevent it from sticking to the bottom of the pot.
  7. After the sauce has been simmering for 10 minutes, start preparing the white sauce. In a saucepan over medium heat, melt the butter. Once melted, add the flour and use a whisk to mix until incorporated.
  8. Gradually add in the milk while whisking the mixture. Whisk until no lumps remain.
  9. Add the nutmeg. Stir for 5-7 minutes or until the mixture is smooth and starts to thicken.
  10. Add parmesan cheese, salt and black pepper. Keep whisking until well combined. Set aside.
  11. Preheat the oven to Bake Mode at 190℃. Assemble the lasagna. Start by spreading a third of the meat sauce on the bottom of a casserole dish.
  12. Lay 3 no-boil lasagna noodles on top then layer meat sauce, a third of the white sauce, and 2/3 cup of mozzarella cheese. Repeat in the same order until you fill the dish (it will be 3 layers and each layer will need 3 noodles). For the last layer, add the remaining 1/2 cup of mozzarella cheese on top.
  13. Spray non-stick cooking spray on a piece of foil and loosely cover the casserole dish. Bake on the middle rack for 15 minutes.
  14. After 15 minutes, remove the foil and continue baking for 15-18 minutes or until the top is golden brown.
  15. Let your lasagna rest for at least 20 minutes before slicing. Garnish with fresh basil leaves and extra parmesan cheese if desired.
