Easy Chicken Salad Recipe

For a cheap salad recipe to feed a crowd or fill the whole family's lunch boxes, this chicken salad from Tefal is a must-try. For best results, make it with the Tefal Easy Fry Classic Air Fryer.

Serves: 4

Ingredients1 tsp extra virgin olive oil4 chicken thighs1 bunch asparagus2 large handfuls of lettuce leaves1 red apple, diced2 celery sticks, diced3 sprigs of tarragon and parsley1 handful of walnutsSalt and pepper

FOR THE DRESSING

2 tbsp mustard1 lemon, zest and juice100ml crème fraiche or buttermilkSalt and pepper, to taste

Method

  1. Drizzle oil over chicken and season with salt and pepper.

  2. Place chicken in the air fryer basket and cook for approximately 20 min, or until cooked through. Remove chicken and cook the asparagus for 6-9 min.

  3. To make the dressing, whisk together mustard, lemon zest and juice, and crème fraiche or buttermilk. Season the dressing with salt and pepper.|

  4. To assemble salad, toss together lettuce leaves, apple, celery, herbs and walnuts.

  5. Chop chicken, cut asparagus into thirds then add to the salad. Pour dressing over salad and toss.
