Homemade Greek Yoghurt Recipe

Want a low carb breakfast without eggs? Enjoy a bowl of creamy goodness with this low carb breakfast recipe from Sunbeam, made with the Sunbeam Food Dehydrator. Dehydrators are great for growing the healthy bacteria and probiotics that yoghurt is prized for, and let you customise the consistency just how you like it. Make the night before and serve chilled in the morning with your favourite fruit.

Preparation time: 20 mins

Cooking time: 7-9 hours

Makes 1L

Ingredients

  • 4 cups (1L) full cream milk
  • 2-3 tsp Greek yoghurt
  • Sterilised, heat-proof jars

Method

1. Set the Dehydrator to 40˚C. Arrange trays to accommodate the height of the jars. The larger the jar, the longer the yoghurt will take to form.

2. In a saucepan, bring milk to a simmer, about 80˚C. Use the tip of a stick thermometer to check milk temperature. Do not boil. Remove saucepan from stove.

3. Whisk in yoghurt. Pour into jars.

4. Place the jars in the Dehydrator. Leave for 7 to 9 hours. The yoghurt should be firm but will be firmer once chilled.

5. For a thicker yoghurt, scoop the finished yoghurt into a tea towel and hold over the sink to drain extra liquid.

6. Refrigerate for up to 1 week.
