Blueberry scones
Whip up scrumptious blueberry scones in your air fryer for brunch bliss that’s ready in less than 15 minutes. With a crispy, golden exterior and perfectly moist centre, these spruced-up scones are a must-make for Mum.

Ingredients
1 cup self-raising flour, plus extra for dusting
1 tablespoon caster sugar
20g butter, cold, chopped
100ml milk
¼ cup blueberries
Jam or butter, to serve
Method
Put flour into a large bowl and stir in sugar. Rub in butter using fingertips until fine crumbs form.
Pour in milk and stir using a butter knife, mixing to form a soft shaggy dough. Turn dough onto lightly floured surface.
Add blueberries and knead briefly and gently with your hands until just smooth. Use your hand to press dough out evenly into a disc, approx. 2cm thick.
Using a knife dusted in flour, cut dough into 9 equally sized rectangular pieces.
Line the basket of the air fryer with a sheet of baking paper and place dough pieces inside, in a single layer.
Set the temperature to 200C and time to 7 minutes (time may vary depending on your air fryer). Cook until golden brown. Set aside to cool for 5 minutes then serve with jam or butter.

Prosciutto pizza
Best shared with Mum, this Italian classic delivers a burst of favourite pizza flavours. Sprinkle some love into a homemade base (a breeze to make with your stand mixer), then serve up this crispy-crust dream straight from the oven – yum!

Preparation time: 20 minutes (plus 40 minutes proving)
Cooking time: 15 minutes

Ingredients
7g dried yeast
1 tsp caster sugar
1 tsp fine salt
400ml warm water
500g baker’s flour, plus extra, to dust
1/4 cup tomato paste
50g prosciutto
1/2 small zucchini, finely sliced
1/4 capsicum, finely sliced
1/4 cup kalamata olives
100g mozzarella, sliced
3–4 sprigs fresh basil leaves
Method
Pre-heat oven to 30°C, proving function.
Place yeast, sugar and salt in a small bowl. Add warm water, stir, and set aside for 5 minutes. Put flour into the bowl of a stand mixer, and once the yeast and water mix begins to foam, add to the flour.
Mix on low speed with a dough hook for 10 minutes. Once mixed, remove and briefly knead on a floured bench for 3 to 4 minutes. Transfer to a clean, oiled bowl and cover with cling film. Place dough in pre-heated oven for 40 minutes, or until it doubles in size.
When the dough has risen, remove from the oven and place onto a floured work surface, then knead for 1 minute and divide the dough into four equal portions.
Pre-heat oven to 230°C, in steam roast mode. Dust a large flat baking tray with a little flour. Roll out one portion of dough on a clean lightly floured surface to about 30cm round and 3mm thick. Transfer to a tray.
Spread an even layer of tomato paste over the base, top with some of the prosciutto, zucchini, capsicum, olives and mozzarella. Cook in pre-heated oven for 12–15 minutes until golden and crispy.
Remove from oven, sprinkle basil leaves on top, and serve. Repeat with remaining dough, or freeze, portioned, for up to 8 weeks.
Watermelon and friends juice
For a fresh and fruity brunch addition, this seasonal sip makes the most of in-season watermelon. The nutritious combination of melon, cherry tomatoes, lime and coconut water, loaded into your juicer, is a cinch to make.

1 cup watermelon, fresh
¼ cup cherry tomatoes
1 ½ tsp lime juice
1 ½ cups coconut water
120g ice

Lemon and sage roast chicken and potatoes
There’s nothing better than crispy potatoes and juicy chicken to gladden Mum’s heart. This recipe takes just 50 minutes in the combi steam oven and you’re done! Lunch is served.

After just 50 minutes in the combi-steam oven, family favourites roast chicken and potatoes are cooked to golden perfection.
Ingredients
1.6kg whole chicken
1 onion, quartered
1 lemon, quartered
1 bunch sage
1kg new potatoes
2 tablespoons olive oil
Salt & pepper
Method
Set combi-steam oven to steam + static + fan and pre-heat to 220⁰C with 70% steam.
Stuff chicken cavity with onion, lemon and sage and place on baking tray with new potatoes. Drizzle chicken and potatoes with olive oil and season to taste with salt and pepper. Roast for 50 minutes.
Carve chicken and serve with pan juices and roast potatoes.
Microwave Mushroom Risotto
This delicious, quick risotto recipe is ready in under 30 minutes, and destined to become a firm family favourite.

Ingredients
60g butter, chopped
1 leek, washed, halved, thinly sliced
1 garlic clove, crushed
1 cup arborio rice
3 cups chicken-style liquid stock
400g mushrooms, sliced: Swiss brown, button or shiitake
50g parmesan cheese, finely grated
1/4 cup flat-leaf parsley leaves, chopped
Salt and pepper, to season
Method
In a large, microwave-safe bowl or rice cooker, combine butter, leek and garlic.
Cover loosely and microwave on High (100%) for 2 minutes or until the leek is soft.
Stir in the arborio rice and coat in the butter mixture then microwave uncovered on High (100%) for 1 minute.
Stir in 2 cups of liquid stock, cover and microwave on High (100%) for 5 minutes.
Microwave for a further 7 minutes on Medium (50%).
Add mushrooms and remaining stock. Cover and microwave on Medium (50%) for 7 minutes.
Allow to stand while covered for 5 minutes.
Add parmesan cheese and parsley leaves, season with pepper and stir to combine.

Ingredients
Pudding
50g butter, melted
½ cup brown sugar
125ml milk
1 free-range egg
¼ cup Dutch cocoa
1 cup self-raising flour
1 ripe pear, unpeeled, cut into 1cm cubes
¼ cup chocolate baking bits (mix of dark and milk)
Coconut yoghurt, double cream or ice-cream, to serve
Sauce
½ cup brown sugar
¼ cup Dutch cocoa
Method
Put the butter in the baking dish then place the dish in the basket of your air fryer. Set the temperature to 180°C and the timer to 5 minutes, to melt the butter (timing may vary depending on your air fryer).
Remove the dish from the basket and allow butter to cool for 5 minutes before adding sugar, milk, egg and cocoa. Use a silicone whisk to beat until combined.
Add flour and beat again until a smooth batter forms.
Add pear and chocolate, and gently fold through the batter. Smooth the surface.
To make the sauce, scatter the sugar and cocoa directly over the batter.
Place the baking dish in the basket of the Air Fryer. Pour 500ml of boiling water over the back of a large spoon, directly on top of the batter, sugar and cocoa.
Set the temperature to 160°C and the timer to 25 minutes. Cook until the cake topping is firm and a thick chocolate sauce has formed on the base.
Remove the dish from the Air Fryer and set aside for 5 minutes before serving.
Serve pudding with coconut yoghurt, double cream or ice-cream.
Strawberry Tiramisu

Ingredients
600ml thickened/heavy cream
300g mascarpone cheese
1 tsp vanilla bean paste
2 tbsp Cointreau (optional)
100ml orange juice
4 tbsp caster sugar
2 tbsp icing sugar plus more for serving
2 pieces of sponge cake (10x15cm) or
16 savoiardi biscuits
500g strawberries
Method
Finely chop ¾ of the strawberries. Place strawberries, orange juice and caster sugar into a small sauce pan and simmer on a medium heat until the strawberry dissolves.
Using a hand blender, puree the mixture until smooth. Place mixture onto a brownie pan and allow to cool.
In a medium bowl, beat the cream until soft peaks form. Add the icing sugar, vanilla bean paste and mascarpone, beat until well combined.
Get the serving tray/glasses ready.
Cut the sponge or savoiardi to fit the serving tray/glasses. Place the sponge fingers into the strawberry mixture and allow to sit for 30 seconds each side.
Layer the biscuits at the bottom of each glass/tray, top with a dollop of the strawberry mixture (if making the adult version drizzle some Cointreau onto the biscuits), top with cream, repeat to produce another layer, repeat until you have no more biscuits left.
Refrigerate for at least two hours.
