Ingredients

  • 1/2 cup (125ml) thickened cream
  • 85g cream cheese
  • 1 tbsp (20ml) lemon juice
  • 1/4 tsp (1.25ml) vanilla essence
  • 65g caster sugar
  • 225g frozen strawberries
  • 1/3 cup ice cubes
  • Whipped cream, for topping
  • 2 cups (310g) fresh blueberries, for garnish

Method

  1. Place thickened cream, cream cheese, lemon juice, vanilla essence, sugar, strawberries, and ice cubes into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1. Turn machine on and slowly increase to the highest speed. Use the tamper to press ingredients into the blades. In about 30 to 60 seconds, the sound of the motor will change and four mounds should form. Stop machine. Take care not to overmix to avoid melting.
  3. Fill bottom half of a serving glass with ice cream. Top with whipped cream and blueberries. Serve immediately.

Store-bought ice cream has a surprisingly large number of potential allergens, from dairy and eggs to peanuts and nuts. "It also means you know you have a safe treat in the freezer so you or your guests with the same food allergies won't have to miss out."

Maria says the most important thing to remember when making food for others is that what is safe for one person might not be safe for another.

"Check all the ingredients with your guests with dietary concerns every time you make a recipe. Access your ingredients from safe suppliers, and ask about ingredients and any cross contamination concerns in the kitchen, like bowls or spoons," suggests Maria.
