4 peppers, tops removed and deseeded
400g brown lentils
250g lean beef mince
1 onion, finely diced
200g crushed tomatoes
2 cups of cooked brown rice
200g feta cheese
2tsp smoked paprika
2tsp ground cumin
1tsp ground turmeric
½ bunch coriander, chopped
¼ cup extra virgin olive oil
Salt & pepper
1. Prepare the peppers, then place all other ingredients in a bowl and mix well
2. Spoon the mixture into the hollowed out peppers, place the top back on each one and arrange in the slow cooker.
3. Add ½ cup water or ½ a tin of crushed tomatoes to the bottom of the slow cooker dish.
4. Cook on medium for 4 hours.
